Flatbread and Tzatziki Recipe

These wraps or flatbreads take 2 minutes to prepare, 15 min for the dough to settle and 2 minutes to cook. Children love making them too. We have served ours with some delicious homemade Tzatziki.
Makes: 8
250g plain flour
1 tablespoon olive or sunflower oil
150ml warm water
1 level teaspoon salt
Pour flour and salt into large mixing bowl and combine the oil and water, then pour the liquid into the flour mixture with one hand whilst mixing the ingredients together with the other.
Once you have a dough (splash more water if too floury, sprinkle more flour if too wet) move onto a floured worktop and knead for five minutes. Then set aside for another 15 minutes. Divide into eight and, with a rolling pin, roll each portion into a circle the size of your frying pan.
Cook over a medium heat for about a minute each side or until lightly browned and slightly bubbly.
Serve warm - either with butter - or use for sandwich wraps or fajita fillings.
Tzatziki:
1 Cucumber - Peeled and de-seeded
350g Greek Yoghurt
2 Garlic Cloves - crushed
2 tablespoons Lemon juice
Salt and Pepper
Grate the peeled and de-seeded cucumber and remove any excess water. Combine the grated cucumber and Greek yoghurt in a bowl and stir in the crushed garlic and lemon juice. Combine all the ingredients and sprinkle in some salt and pepper and finish with a drizzle of olive oil.
