This pudding is a delicious and nutritious breakfast, mid-day snack, light dinner, or dessert.
Chia seed is a superfood! It is well priced, especially if you get the mixed dark and light seed (if purchased as white only it’s more expensive, and some think prettier in a light pudding) which I’m perfectly happy with. I purchased it organic and a sustainably grown from my local Trader Joe’s, although it’s available almost everywhere, including online.
Chia packs a nutritional punch, even in a small serving. Two tablespoons offers 8 grams of mostly omega-3 fatty acids in the form of ALA, 8 grams of fiber, which our microbiome loves, and 5 grams of protein!
I add chia to my morning oatmeal, use it in smoothies and salad dressings, as well as baked goods.
This Chia pudding is one of my favorite because the flavor is subtle and a beautiful foundation to cut up fresh fruit like kiwi, mango, pineapple, apricots, and berries. It makes a wonderful breakfast, snack, and dessert. Nourishing us well whenever we eat it. Enjoy!
