Chicken Chinthamani Recipe:

Country Chicken (Naatu Kozhi) - 600 grams
Gingelly Oil - ½ Cup
Mustard Seeds - 1 pinch
Fenugreek Seeds - 1 pinch
Shallots - 40 nos (200 grams)
Dried Red Chilli (deseeded) - 10 nos
Curry Leaves - 10 nos
Water - 2 Cups
Salt - To Taste
Turmeric - ½ tsp
Coriander Leaves - 1 tbsp

Cooking Instructions:

1. Wash the chicken with ¼ tsp of turmeric and ¼ salt.

2. Heat a pan or a pot. Add Gingelly Oil.

3. Add mustard seeds and Fenugreek seeds and let it splutter.

4. Add chopped shallots and red chilli. Cook until the shallots turn golden brown.

5. Add the curry leaves.

6. Add the cleaned and washed chicken. Saute for 2 mins.

7. Add 2 cups of water

8. Add ½ tsp turmeric powder and salt to taste.

9. Cook till the water evaporated and the gravy coats the chicken.

10. Add coriander leaves and remove from heat.

11. Serve hot with Rice/Idly/Dosa.
