Ingredients
DOUGH
4 cups flour
1 tablespoon yeast
1/2 tablespoon salt
2 tablespoons oil
1 egg
1 yolk
2 tablespoons sugar
FILLING
10 oz farmer's crumbling cheese
8 oz feta cheese
1/2 tablespoon dill
Instructions
Step 1. Add flour to a mixing bowl. Make a well in the center and place the yeast inside. Add 1/2 cup of warm water and mix with some of the surrounding flour. Let sit for 10 minutes.
Step 2. Add the eggs, oil, sugar, and salt to the mixture and begin kneading the dough, adding warm water as needed. Knead for a few minutes until a soft, slightly sticky dough forms. Shape into a ball, sprinkle with flour, cover with a cloth, and let rise for 1 hour.
Step 3. Roll the dough out on a floured surface and divide it into 8 pieces. Lightly knead each piece and set aside. Let rise for another 20 minutes.
Step 4. Stretch each piece of dough into a circle. Place filling on one half of the circle, then fold the other half over the filling. Press to seal the edges.
Step 5. Heat oil in a frying pan. Gently place each langosi into the hot oil and fry for 2–3 minutes per side, flipping carefully. The dough is soft and full, so handle with care. Fry until golden brown.
Cook’s Note
Langosi are best served warm and can be enjoyed plain, dusted with powdered sugar, or filled with cheese or jam. The dough is soft and stretchy, giving these fried breads their signature texture.
