In this episode, I sit down with Matt Borowski — owner of some of the best restaurants in New Jersey, including 618 and Mezcal. Matt is also a partner in Jersey Freeze and the founder of the upcoming Elizabeth’s Modern Italian.
Matt grew up in Brooklyn, NY, sharing a small apartment, he started working in the restaurant industry at 13. He eventually dropped out of college and worked his way up in the restaurant industry to create some of the most respected hospitality brands in the state. We talk about what true hospitality really means, hiring for personality, investing in employees, and making every guest feel seen and valued.
Matt also opens up about the realities of owning a restaurant, the years it takes just to get on your feet, the importance of building the right team, and how he balances business with being a present father, husband, and friend.
