Ingredients for 12 Buns:
• 100ml/ ½ Cup Warm Water
• 12g/ 2 tsp Cup Fresh Yeast
• 20g/ 2 tsp Honey
• 100g/ ¾ Cup All-Purpose Flour
• 1 Egg
• 150ml/ ½ Cup + 2 tbsp Warm Milk
• 65ml/ 3 tbsp Sunflower Oil
• 1 Egg Yolk
• 50 ml/ ¼ Cup Heavy Cream
• 130g/ ¾ Cups Sugar
• 1 tsp Vanilla Extract
• 550g/ 4 Cups All-Purpose Flour
• 110g/ 1 Cup Chocolate Chips
Step 1
In a bowl, combine the warm water with the fresh yeast and the honey. Stir until well combined. Incorporate 100g all-purpose flour, cover with plastic wrap and let it rest for 30 minutes at room temperature.
Step 2
Add the warm milk, the oil, 1 egg and whisk until well combined. Add the sugar, vanilla extract and then incorporate gradually 550g all-purpose flour. Knead until the dough has an elastic texture. Add the chocolate chips and knead until well incorporated. Cover with plastic wrap and let the dough rise at room temperature for 2 hours.
Step 3
Transfer the dough on a floured surface and knead it a bit more. Cut the dough in 12 equal pieces and form a ball from each piece.
Place them on a prepared baking tray lined with parchment paper, cover them with a kitchen towel and let them rest for 30 more minutes.
Step 4
Combine 1 beaten egg yolk with the heavy cream and grease each ball. Bake them at 180°C for 15-20 minutes.
