Ingredients:
1 cup basmati rice, soaked for 20 - 30 minutes and drained
200 grams paneer (cottage cheese), cubed
1 cup green peas (matar), fresh
2 tablespoons ghee or oil
1 teaspoon cumin seeds
1 bay leaf
2-3 green cardamom pods
4-5 cloves
1-inch cinnamon stick
5 - 6 cashew
1 medium-sized onion, finely chopped
2 green chili, slit lengthwise (optional)
1 teaspoon ginger-garlic paste
1 cup green capsicum
1 cup french beans,
1 cup carrot
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
Salt to taste
2 cups water
Fresh coriander leaves for garnish
Instructions:
In a pressure cooker, heat ghee or oil over medium heat.
Add cashew and stir it until gets golden brown colour.
Then add paneer in the oil and fry it.
Add cumin seeds, bay leaf, green cardamom pods, cloves, and cinnamon stick. Sauté for a minute until aromatic.
Add finely chopped onion, green capsicum, carrot, french beans, and slit green chili (if using). Mix it well.
Stir in ginger-garlic paste and sauté for another minute until the raw aroma disappears.
Add turmeric powder, red chili powder, and garam masala. Mix well to combine with the onion mixture.
Add cubed paneer, cashew and green peas to the cooker. Sauté for 2-3 minutes, stirring gently to coat the paneer and peas with the spices.
Add soaked and drained basmati rice to the pan. Mix gently to combine with the paneer and peas.
Pour in 2 cups of water and season with salt. Stir well.
Bring the mixture to a boil, then reduce the heat to low, cover the cooker with a lid, and weight for 1 whistle or 5 minutes or until the rice is cooked and all the water is absorbed.
Once done, fluff the Matar Paneer Pulao gently with a fork.
Garnish with fresh coriander leaves.
Your flavorful Matar Paneer Pulao is ready to be served hot with raita or any curry of your choice!
