These will take you 30mins from weighing out the ingredients to having your first bite. Super easy to make and can be packed with fruit, also the yoghurt makes them even more moist and healthy.
This is my go to recipe if people are popping by for a cuppa.
They are amazing, I have adapted and played round with different flavors and you cant beat blueberry and the yoghurt makes them even more amazing.
Makes 12 perfect muffins
Oven 200c
INGREDIENTS
Dry:
220g Plain flour (If you want to add cocoa swap a tbsp of flour out for a tbsp of cocoa)
1tsp baking powder
½tsp baking soda
1/2 tsp cinnamon (optional or could use ginger/nutmeg)
Pinch of salt
Wet:
70ml oil (I use melted coconut or vegetable oil)
150ml cup honey or maple syrup
2 eggs
250g yogurt (Full fat has a better taste)
2tsp vanilla (can use almond)
Flavour:
100g blueberries - I use frozen as cheaper. You can also swap for other fresh fruit(banana, strawberries, raspberries, mixed berries etc. /chocolate chips/dried fruit or a mix.
I love to sprinkle the muffins with desiccated coconut before they go into the oven. You also sprinkle with sugar. You could also put a little dollop of peanut butter in them to be really cheeky.
