After you have completed all Drustan's trials you may redo the boss fight of your choice at any time and change who you live with. This video shows doing so, changing companion to Serena followed by life with her in Cobblestone. Serena's is the most romantic one second to Gemma who's the canon choice you can actually marry.
By this time you should easily be able to vanquish the first boss ridiculously quickly so this isn't so much of a chore to do. I'd have taken less than 4 turns had Veronica's turn come sooner.
