Pasta a la norma
Ingredients:
1 eggplant eggplant
1/2 cooking onion
Lots of fresh basil
1/2 cup of vegetable oil
Salt and pepper to taste
3 cups of marinara sauce
10oz penne rigate
1/4 cup of grated parmigiana
Instructions:
Preheat your pan on medium heat and add your vegetable oil.
Cut the eggplant in cubes and add them into your hot oil one handful at a time. Allow to slowly cook until golden. Remove from hot oil and place on paper towel to absorb excess oil.
In another pan add your marinara, eggplant and fresh parsley. Let it simmer on low heat.
While that simmers you can cook your pasta al dente( penne ) Once cooked add your pasta to your sauce. Add cheese on top and enjoy!@Rachael Ray
