🍓 Strawberry Cheesecake Buns
These soft and fluffy strawberry cheesecake buns are filled with a creamy cheesecake center and topped with sweet strawberry jam, then baked until perfectly golden.
They’re easy to make at home, incredibly delicious, and perfect for breakfast, dessert, or enjoyed with a cup of coffee ☕🍓
This recipe also includes helpful tips for working with yeast dough and achieving a light, airy texture every time.

Crumble
• All-purpose flour 42 g
• Sugar 50 g
• Melted butter 42 g
• Brown sugar 1 tbsp
Cover and refrigerate until ready to use.
🧀 Cheesecake Filling
• 230 g cream cheese, softened
• ¼ cup (50 g) sugar
• 1 tsp vanilla extract
• 2 tbsp heavy cream
Mix until smooth and creamy.
Cover and refrigerate until ready to use.

🍞 Dough
First step
• 1 cup (220 g) warm water
• 1 tbsp active dry yeast
• 2 tbsp sugar
• 1 cup (120 g) all-purpose flour
Mix well and let rest for 10 minutes.
Then add
• 1½ cups (180 g) all-purpose flour
• ⅓ cup (72 g) vegetable oil
• 2 tsp salt
• ¼ cup (50 g) sugar
Note:
I used 14 g fresh yeast, so there was no need to activate it.
If using fresh yeast, mix all ingredients except the oil together until the dough comes together, then add the oil at the end.
Also, use cold water instead of warm water when using fresh yeast.
Knead for 5–8 minutes until smooth and elastic.
If the dough feels sticky, add flour 1 tablespoon at a time.
Instead of adding too much flour, lightly oil your hands.
Cover and let the dough rest for 1 hour, or until doubled in size.

🧁 Assembly
1. Punch down the dough and divide it into 6 equal pieces.
2. Flatten each piece and add a spoonful of cheesecake filling.
3. Seal well and place seam-side down on a parchment-lined tray.
4. Cover and let rest for 10 minutes.
5. Brush with 1 beaten egg.
6. Add a tablespoon of strawberry jam on top of each bun.

🔥 Baking
Bake in a preheated oven at 190°C (375°F) for 25–30 minutes, or until golden brown.
Let cool slightly before serving.

• Do not overfill the buns to prevent leaking.
• Oil your hands instead of adding extra flour for a softer texture.
• Let the buns cool slightly so the cheesecake filling sets beautifully.
