📄 PEANUT BUTTER CAKE [ 4 Steps]:
• 1. Sponge
• 2. Peanut butter filling, cream
• 3. Sugar syrup, Chocolate decoration
• 4. Assemble
The measurements in this recipe are based on a standard 250ml measuring cup.

1.SPONGE
Ingredients:
30g (1oz - 2Tbsp) - unsalted butter
240g (8.5oz - 2cups) - flour
200g (7oz - 1cup) - granulated sugar
6 large eggs
pinch of salt
1 Tbsp vanilla extract

Method:
1. Remove the eggs from the refrigerator at least an hour before you start to work.
2. Line the whole cake tin (23cm/9inch) with the baking paper with an overlap approx. 3cm.
3. Melt the unsalted butter, let it cool, put aside.
4. Sift the flour.
5. Put the granulated sugar into a bowl, add the eggs in two batches and mix well.
6. Add the salt, vanilla extract and whisk well on the high speed at least 15 minutes, until the mixture becomes light and fluffy.

2. PEANUT BUTTER FILLING, CREAM
Ingredients:
330g (11.6oz - 1 2/3 cup) - mascarpone
250g (8.8oz - 1cup) - peanut butter
300g (10.6oz - 1 1/3 cup) - heavy cream (33% - 38%)
4 Tbsp - granulated sugar

Method:
1. Put the mascarpone into a bowl, add the peanut butter and mix well.
2. Into another bowl pour the well-chilled heavy cream, gradually add the granulated sugar and whisk well.
3. When the heavy cream is whipped, gradually add into the peanut butter and the mascarpone mixture. Carefully mix well with the spatula.

3. SUGAR SYRUP
Ingredients:
150ml (5fl oz - 2/3 cup) - water
150g (5oz - 2/3 cup) - granulated sugar
2 Tbsp - Amaretto liqueur or Rum

Method:
1. Pour the water into a saucepan, add the granulated sugar and stir until it starts to boil.
2. Pour into a bowl and let it cool.

CHOCOLATE DECORATIONS
Ingredient:
160g (5.6oz) - dark chocolate (64% - 85% cocoa)

Method:
1. Pour the hot water into a saucepan, put a bowl inside, put the dark chocolate and stir on low heat until the chocolate will melts.
2. Pour the melted chocolate into a piping bag, use the nozzle with very small hole.
3. On the baking paper create the chocolate grids, put to the freezer for 10 minutes.

4. ASSEMBLE
1. Sponge
2. Peanut butter cream
3. Sugar syrup
4. Melted chocolate
5. 4 bananas
6. 300g (10.6oz - 2 1/2 cup) chopped peanuts

Method:
1. Carefully cut the cake into 3 layers.
2. Cut the bananas into the slides.
3. Place the first cake layer on a plate, brush the sugar syrup on the top.
4. Separate 4 tablespoon of peanut butter cream in a bowl for the cake decoration.
5. Spread a tin layer of the cream on the top of the cake layer, place one layer of the banana slides and cover with the cream.
6. Place the second layer of the cake and repeat the same procedure.
7. Top with the third layer of cake, baked side up.
8. Cut the peanuts into a small pieces and sprinkle a bottom side of the cake.
9. Use the remaining melted chocolate and with a piping bag create the chocolate lines on the top of cake.
10. Coat the inside of the piping bag with a little melted chocolate, add the remaining peanut butter cream , using a star nozzle, decorate the cake border.
11. Finally decorate the cake with chocolate grids.
