ABOUT THIS RECIPE:
Walnut Ghriba is a beloved Moroccan cookie with a crisp exterior and a soft, chewy interior, generously coated in icing sugar for that perfect touch of sweetness.
These cookies are incredibly easy to make and absolutely delicious. We highly recommend trying them at least once in your life!

Ingredients:

For the Ghriba dough:
500g (1 lb) raw almonds
500g (2 cups) white granulated sugar
3 large eggs
500g (1 lb) raw walnuts

To decorate:
60ml (1/4 cup) orange blossom water for shaping the dough
340g (2 cups) icing sugar
Raw Walnuts

Steps:

1- In a bowl, put the almonds, sugar, and eggs, and mix everything together.
2- Grind the mixture in a manual meat grinder or an electric food processor.
3- In the same machine, after removing the almond mixture, grind the walnuts well to obtain a powder.
4- In a bowl, place the almond mixture and ground walnuts, then combine the ingredients until you have a smooth dough that is easy to shape into balls.
Note: if the dough is too dry, add 1 egg extra. .
5- Preheat your oven to 180°C (350°F).
6- Dip your hands in orange blossom water, then form small balls of dough of about 19g (0.67 ounces) in weight or the size of a walnut.
7- Roll the balls in the icing sugar until they are completely covered, then place them on a baking sheet lined with baking paper.
8- Gently press a half walnut on top in the center of each ball.
9- Bake the Ghriba in the oven at 180°C (350°F) for 10 minutes.
10- Leave the walnuts Ghriba in the tray, and set them aside to cool completely before serving or storing them.
