PAKLAY RECIPE l BEST PAKLAY BISAYA l HOW TO COOK PAKLAY
Ingredients:
1 kilo tripe
½ kilo pig liver
½ kilo pig kidney (or heart)
1 head of garlic, minced
1 big red onion, sliced
¼ cup ginger, cut into strips
3-4 pcs bay (laurel leaves)
¼ cup pineapple chunks
1 pc red bell pepper, cut into strips
1 pc green bell pepper, cut into strips
1 cup bamboo shoots, cut in strips
1 pack tamarind mix / sinigang powder mix
1 beef bouillon cube
1 teaspoon ground pepper
2 cups beef broth
3 tablespoons annatto oil / annatto powder (atsuete) dissolved in water for coloring
3 tablespoons cooking oil
1 tablespoon fish sauce
Water to boil and rinse the meat
Instructions:
(1) Boil 6 cups of water (or just enough to soak the tripe, kidney (or heart) and liver.
(2) Add bay (laurel) leaves, peppercorns and salt
(3) Once boiling, add the tripe, kidney and liver. Continue boiling for an hour (depending on the quality of the meat) until the meat is tender.
a. Using pressure cooker can reduce your time to tenderize the meat or the tripe, kidney and liver.
(4) Set aside the tripe, kidney and liver. Discard the water.
(5) Slice the tripe, kidney and liver in strips.
(6) Heat oil in a pan
(7) Saute garlic, ginger and onion.
(8) Add the sliced tripe, liver and kidney. Mix well.
(9) Add bay (laurel) leaves, beef broth, and ground pepper. Mix.
(10) Simmer for 15 minutes. Cover
(11) Once boiling, add the pineapple and bell pepper.
(12) Add and Dissolve the bouillon cube. Simmer for another 5 minutes.
(13) Add the tamarind powder or sinigang mix and annatto oil (or atsuete powder dissolved in water)
(14) Stir. Simmer for 2-3 minutes.
(15) Add bamboo shoots. Simmer for another 15 minutes.
(16) Add fish sauce to taste.
(17) Paklay, the all time favorite pulutan is now ready to be served !
