Hidden in plain sight in hedgerows and parks (I got some dirty looks from city hall while I picked these😬), hawthorn berries have been foraged for centuries. Rich in vitamin C and antioxidants, they’ve been used in folk medicine and fairy tales, and – my favorite – a traditional "Hawthorn ketchup"
500g hawthorn berries (remove stems and rinse berries)
300ml apple cider vinegar
300ml water
150g brown sugar
1ts seasonings of your choice
· bring berries, ACV, and water to boil; simmer for 30 min
· pour into a sieve and mash berries through (it takes ages to mash enough pulp through)
· add brown sugar and seasonings to the pulp+ACV+water pot; bring to a boil; simmer for 5 min or until it has the ketchupy consistency you prefer
· enjoy your sauce with roasted veggies, on a pizza, in a burger
