VEGAN FRIED RICE RECIPE:
Hello! Today I will be showing you how to make vegan fried rice. This is one of my favorite meals and I hope you love it too!
Ingredients:
4 cups Jasmin Rice
1 1/2 cups frozen peas and carrots
10oz Meatless Chick’n Strips
1/2 Bottle JUST Egg
1-2 cloves garlic
1/2 inch ginger root
2-4 tbsp Soy Sauce
4 tbsp Sesame Oil
Optional Spicy Mayo:
Vegan Mayo + Hot Sauce
-Chop Chick’n Strips into bite size pieces
Mince garlic & ginger set aside.
-Cook rice and set aside.
-Heat Sesame Oil in a large pan on high heat
-Once oil is aromatic turn down to medium high heat and cook Chick’n until crispy. Transfer to a bowl with slotted spoon and set aside
-In same pan, cook vegetables and add garlic and ginger for 2-4 minutes on medium high heat (until vegetables reach desired consistency)
-Push vegetables to one side and pour JUST egg on the other side of the pan. Scramble.
-Once the JUST egg is cooked, add approximately 2 tbsp soy sauce.
-Add cooked rice and chick’n, add soy sauce to taste.
