Fried Dried Lotia Fish Recipe
Ingredients:
• Dried lotia fish – 250 g (or as needed)
• Onion – 3 large, thinly sliced
• Garlic – 9 cloves, finely chopped or sliced
• Chili flakes – 1 cup (adjust to your spice level)
• Paprika powder – 1 teaspoon
• Chicken powder – 1 teaspoon
• Cooking oil – about 1 cup (enough for frying)

Instructions:
1. Prepare the fish
• Soak the dried lotia fish in warm water for about 10–15 minutes to reduce saltiness and soften slightly.
• Drain well and pat dry with a paper towel.
2. Fry the fish
• Heat oil in a pan over medium heat.
• Once hot, fry the lotia fish until golden brown and crispy.
• Remove and drain excess oil using a strainer or paper towel.
3. Make the aromatic mix
• In the same oil (use less if too much), add sliced garlic and fry until light golden brown.
• Then add sliced onions and fry until they turn light brown and caramelized.
• Add chili flakes, paprika powder, and chicken powder. Stir for 30–40 seconds.
4. Combine everything
• Add the fried lotia fish back into the pan.
• Mix well so that the fish is coated evenly with the spicy onion-garlic mixture.
5. Finish and store
• Cook for another 2–3 minutes on low heat.
• Remove from heat and let it cool completely.
• Store in an airtight container — it can stay fresh for several days.
