What is wine? Wine is an alcoholic beverage made by fermenting the juice of grapes. In this video, you will learn basic terms related to wine growing and winemaking, basics of fermentation, some background knowledge on wine, its history, and the different things we do in the winemaking process to create the product.
Winemaking/growing Terms:
Viticulture: everything that is done in the vineyard
Vinification: everything that is done in the winery
Topography: forms and features of land surfaces
Aspect: the degree and direction of a natural land feature
Terroir: the French concept of the complete system of the vine, from location, sunlight, and soil to the overall climate, aspect of the vineyard, and the hands of the vigneron
Vine Training: training the vines to grow a specific way in order to maximise the performance of the vine in its particular growing conditions
Grafting: attaching one grapevine species to the rootstock of another for its disease resistance
Green Harvest: the practice of removing bunches of grapes in order to have the vine’s resources go to producing even higher quality fruit with what is left on the vine
Hectare: equivalent to 2.47 acres
Must: the unfermented juice of the grapes
Maceration: extended contact of the grape skins and must
Lees: yeast that “dies” and settles at the bottom of the tank
Sur lie aging: aging on the lees. This releases aromas and flavours of brioche, white flowers, and almond
Bâtonnage: stirring of the lees
Chaptalization: the addition of sugar to the must in order to increase the level of alcohol in the finished wine
Acidification: the addition of acid to the must or finished wine in order to increase the overall acidity
Climate Terms:
Macroclimate: climate of an overall larger or general region
Mesoclimate: climate of a smaller region or single vineyard
Microclimate: smaller climate, for example a vineyard with varying aspects and elevation will have multiple microclimates
Arid: hot, dry
Mediterranean: characterised by hot, humid summers and mild winters
Maritime: influenced by a large body of water
Continental: experiences all four seasons, with warm summers and cold winters
