Mediterranean Oven Roasted Vegetables Recipe Ingredients
• 1 Yellow Zucchini
• 1 Green Zucchini
• 3 carrots, peeled and diced
• 1 green bell pepper
• 1 red bell pepper
• 1 yellow bell pepper
• 4 Garlic cloves, minced/chopped
• 1 cup baby potatoes/regular potatoes (Parboil the baby potatoes for 5-7 minutes (until 50% cooked) in boiling water and then chop into quarters, add them.
• 3 tbsp olive oil
• 1 tsp black pepper powder
• salt to taste (Start with 1/2 tsp)
• 2 tsp Italian seasoning (or use 1/2 tsp oregano+1/2 tsp basil)
• 1 tsp garlic powder
• 1 tsp paprika
• 1-2 tsp lemon juice
• 1 cup cherry tomatoes, sliced
• 1 cup chopped plum tomatoes (optional, you can add another cup of cherry tomatoes)
