🛒 Ingredients You'll Need:
For the Base:
1 cup (150g) Whole Wheat Flour (Atta)
½ cup (100g) Semolina (Sooji/Rava) - optional, for texture
¾ cup (180ml) Ghee (Clarified Butter) - use good quality for best results
The Powerhouse Nuts & Seeds:
½ cup (60g) Almonds, roughly chopped
½ cup (60g) Cashews, roughly chopped
¼ cup (30g) Walnuts, roughly chopped
¼ cup (30g) Pistachios, roughly chopped
¼ cup (30g) Melon Seeds (Magaz)
¼ cup (30g) Pumpkin Seeds
2 tbsp (15g) Chia Seeds
2 tbsp (15g) Flax Seeds (whole or lightly crushed)
2 tbsp (15g) Poppy Seeds (Khus Khus)
2 tbsp (15g) Gond (Edible Gum Crystals) - important for postpartum/winter
The Sweetness & Spice:
1 cup (200g) Jaggery Powder (Gur Powder) or finely grated Jaggery - adjust to taste
1 tbsp Dry Ginger Powder (Saunth Powder)
1 tsp Cardamom Powder (Elaichi Powder)
½ tsp Nutmeg Powder (Jaiphal Powder)
Optional Boosters:
¼ cup (30g) Dried Coconut, grated or desiccated
¼ cup (30g) Raisins or chopped Dates
2 tbsp Makhana (Fox Nuts), roasted and crushed
👩🍳 Step-by-Step Recipe:
Step 1: Roasting the Gond
Heat 1-2 tbsp of ghee in a large, heavy-bottomed pan or kadai over medium-low heat.
Add the Gond in small batches. It will puff up and become crispy within seconds. Remove immediately and set aside on a plate. Crush lightly once cooled. Be careful not to burn it.
Step 2: Roasting Nuts & Seeds
In the same pan, add a little more ghee if needed.
Add almonds, cashews, walnuts, and pistachios. Roast on low heat until lightly golden and fragrant (about 3-5 minutes). Remove and set aside.
Next, add melon seeds, pumpkin seeds, chia seeds, flax seeds, and poppy seeds. Roast until they start to pop and smell aromatic (2-3 minutes). Be careful not to burn them. Remove and set aside.
If using, lightly roast grated coconut and makhana until fragrant. Remove.
Step 3: Roasting the Flours
Add the remaining ghee to the pan.
Add whole wheat flour and semolina (if using).
Roast on low heat, stirring continuously, for 15-20 minutes, or until the flour turns golden brown and releases a rich, nutty aroma. This step is crucial for flavor!
Step 4: Combining & Sweetening
Once the flour is perfectly roasted, turn off the heat.
Immediately add the jaggery powder, dry ginger powder, cardamom powder, and nutmeg powder to the hot flour mixture. Stir well until the jaggery melts and combines smoothly with the flour. The residual heat will help it dissolve.
Add all the roasted nuts, seeds, crushed gond, and any optional ingredients like raisins or dates.
Mix everything thoroughly until all ingredients are evenly distributed.
Step 5: Cool & Store
Spread the Panjiri mixture on a large tray or plate to cool completely.
Once cooled, store in an airtight container at room temperature. It stays fresh for several weeks!
