cinnamon roll dough ingredients:
★ 80 g (2/3 c) buckwheat flour
★ 80 g (2/3 c) white rice flour
★ 160 g (1 1/4 c) tapioca flour / starch (they r da same thing!)
★ 6 g (~2 tsp) each of active dry yeast, xanthum gum, salt, & baking powder
★ 36 g (1/8 c / ~1/3 stick) melted butter
★ 180 g (3/4 c) warm water
★ 100 g (1/2 c) warm milk
★ 40 g (1/4 c) white sugar
★ 1 egg (~50 g)
★ 15 g (1/8 c) psyllium husk
★ 120 g (1/2 c) milk / cream for baking cinnamon rolls
cinnamon filling ingredients:
★ 100 g (1/2 c) dark brown sugar
★ 10 g (~4 tsp) cinnamon
★ 56 g (1/4 c / 1/2 stick) softened butter
★ 30 g (1/8 c) mascarpone (can replace with 30 g butter if you don’t have mascarpone!)
frosting ingredients:
★ 60-80 g (2/3 c) powdered sugar
★ 222 g (1 c) cream cheese
★ 60 g (1/4 c) mascarpone
★ 56 g (1/4 c / 1/2 stick) butter
★ 4 g (1 tsp) vanilla bean paste
instructions:
★ preheat oven to 350 f / 176 c
★ add water to yeast and psyllium husk
★ mix flours, baking soda, anthem gum, salt, & sugar
★ add the wet ingredients (milk, melted butter, egg, yeast, & psyllium husk)
★ cinnamon filling: in a separate bowl, mix together the brown sugar, cinnamon, butter, & mascarpone (if you have it, if not, replace with regular butter!)
★ flour your surface & roll out your dough to 1/4-1/2 inch thick
★ add your cinnamon filling & cut into 6 even strips length-wise, roll & place into buttered pan
★ let the rolls proof for 30 minutes to an hour, or until doubled in size (make sure your yeast is alive or they will not rise!)
★ frosting: whip the cream cheese, powdered sugar, mascarpone, butter, & vanilla bean paste together
★ pour the 120 g milk / cream (& maple syrup if wanted) onto the proofed cinnamon rolls & bake for 30 minutes
★ frost those bad boys
★ enjoy!
