How To Make Vegan Spanish Setas Al Ajillo - Norfolk Tapas

Today, we're making Setas al Ajillo, a classic #vegan #tapas #dish and #featuring oyster mushrooms infused with garlic, herbs, and a touch of white wine.
This is a #Norfolk #fusion #recipe that adds a unique spin to the traditional Spanish favourite. Perfect as an appetiser, side dish, or served with crusty bread!
Ingredients:
500g oyster mushrooms
Zest of 1 lemon
3-4 cloves garlic, finely chopped
1/3 cup dry white wine
1 tsp liquid smoke
2 tbsp extra virgin olive oil
Salt and freshly ground black pepper (to taste)
2 tbsp fresh parsley, finely chopped
1 tbsp fresh chives, finely chopped
Instructions:
Prep the Ingredients: Clean the oyster mushrooms and tear them into bite-sized pieces. Finely chop the garlic, parsley, and chives. Zest the lemon.
Infuse the Oil: Heat olive oil in a large pan over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
Cook the Mushrooms: Increase the heat to medium-high and add the oyster mushrooms. Season with salt and pepper. Add white wine, and liquid smoke.Cook for 5-7 minutes, stirring occasionally, until tender and golden brown. Add fresh parsley and chives and stir.
Add Flavour: Stir in the lemon zest, Let it simmer for 2-3 minutes until the wine reduces slightly.
Finish with Herbs: Remove from heat and toss in the parsley and chives for a fresh, aromatic finish.
This vegan adaptation retains all the bold flavors of traditional Setas al Ajillo but many other recipes make protagonists of sherry, lemon or paprika. Typically spanish food is likely more garlic led. I don't agree with the other ways of cooking this. It's simplicity is hands on garlic, hands off other ingredients.
