Never grill dry salmon again. Just like steak, salmon will dry out when overcooked. For best results, insert a food thermometer to check doneness.
Tips for the ultimate grilled salmon:
-Remove the fish from the refrigerator for about 15 min before you're ready to start grilling.
-Pat dry the fish with paper towels before adding EVOO and seasoning for a crispier skin.
-Like a good steak, salmon cooks well on high heat; this makes it ideal for grilling.
-Let the salmon rest for about 10 min. after you pull it off the grill.
