In this video I’m sharing three nourishing bean protein recipes I make when I want something grounding, comforting and satisfying. These are simple, flavour forward. No restriction, just real nourishment. Enjoy!
Stuffed squash, quinoa & butterbeans
(Serves 2)
1 squash of choice
150g cooked quinoa
100g kale
40g butter
Butter beans:
200g butter beans
1 small red onion
2/3 garlic cloves
200g cherry tomatoes
1 tbsp. Tomato paste
1.5 tbsp. mascarpone
Salt & pepper
Tahini yogurt dressing:
50ml. light tahini
1 tbsp. Greek yogurt
2 tbsp. lemon juice
½ tsp. maple syrup
salt
1 tbsp. water (add more if needed)
Optional toppings:
Toasted pine nuts
Feta
Parsley
Black beans & cod
(Serves 2)
Black beans:
300g cooked black beans
1 white onion
2-3 garlic cloves
1.5 tsp. oregano
1 tbsp. cumin seeds
1⁄2 tsp. smoked paprika
1/8 tsp. chilli flakes
3/4 cup stock/ broth of choice or water
handful fresh coriander
extra virgin olive oil
salt
Cod:
2 tbsp. Greek yogurt
1 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. smoked paprika paprika
1 tbsp. garlic powder
1/4 tsp. chilli flakes
1.5 tbsp. lime juice
EVOO
1 tbsp. tamari
Salt & pepper
Greens:
200g greens of choice Butter
20g butter
1 garlic clove
salt
Harissa carrot cannellini bean one pot
(Serves 2)
400g cannellini beans
300g carrots
300g silken tofu
1 tbsp. Harissa paste (less or more if required)
1 white onion
2/3 garlic cloves
2-3 fresh sprigs thyme
200ml vegetable stock
EVOO
salt & black pepper
fresh parsley
