Chef Nelson is showing us how to turn simple leftover ingredients into a fast, flavorful dinner! This quick stir fry uses a mix of fresh veggies and ready-to-cook udon noodles to create a delicious, budget-friendly meal anyone can make.
Using mushrooms, carrots, zucchini, white onion, jalapeño, garlic, and ginger, Chef Nelson builds layers of flavor right in the wok. He also mixes up a simple homemade stir-fry sauce with beef bone broth, soy sauce, rice wine vinegar, chili crisp oil, black pepper, and cornstarch—super easy, super tasty.
He gets the wok hot and oiled, then goes in with the zucchini, carrots, and mushrooms, letting them get that beautiful wok hay color. Next come the onions and jalapeño. A couple minutes later, the garlic and ginger join the party—now the kitchen smells incredible.
Finally, in go the udon noodles and the stir fry sauce. A splash of extra bone broth helps steam the noodles and loosen them up. Once everything is coated and glossy, it’s done!
