This recipe utilises watercress in place of the traditional spinach, which is commonly used to line the inside of any types of Wellington. You will find that the watercress provides a much better flavour, in fact, you could substitute watercress for spinach in this way for any recipe you like, as it wilts and cooks in exactly the same way.
