SOUR CREAM AND ONION KALE CHIPS (vegan, gluten-free, nut-free)
It’s insane how something so healthy it can be so good 🥲🥲 just a heads up: you may (will) eat all of them in one sitting.
✨ INGREDIENTS ✨
1 head of kale (I prefer curly kale for kale chips)
Sour cream and onion sauce:
1 cup sunflower seeds (plain and without the shell)
2 small red onions, or 1 large
1/2 cup nutritional yeast
1/3 cup water
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1 teaspoon garlic powder
1 1/2 teaspoons sea salt
Few cracks of black pepper
2 teaspoons maple syrup
✨ METHOD ✨
1. Preheat your oven to 210 degrees Fahrenheit or 100 degrees Celsius.
2. Wash your kale and let dry on a clean dish towel.
3. Remove the kale stems by pulling down the stem with one hand and pulling the leafy part up with the other hand. You make need to go in again after to remove any remaining thick stem parts. FYI my dog is obsessed with kale stems and maybe yours is too haha.
4. Leave the kale leaves in big pieces since they will shrink a lot. They also break easily and you can always break them up after baking if needed.
5. In a high speed blender or food processor, blend the sauce ingredients until smooth.
6. With your hands, massage the kale with the sauce in a large bowl.
7. On two parchment-lined baking sheets, lay out your kale pieces in one layer (don’t stack any) so that they crisp up. Bake until the chips are dried out and crispy, but not burnt (takes about 1 1/2 hours, but it varies oven to oven). Remove any prematurely crispy chips from the oven along the way. Enjoy immediately or keep in an airtight container for up to 2 weeks (make sure they’re completely dried out and not soggy).
