Holi is incomplete without Gujiya. No matter how many sweets you prepare, Holi feels incomplete without traditional Gujiya. In this video, I am sharing an authentic dry Mawa (Khoya) Gujiya recipe that stays fresh for many days and tastes absolutely delicious.
These Gujiyas are:
✔ Extra crispy and khasta from outside
✔ Soft, rich and melt-in-mouth from inside
✔ Perfect festive Indian sweet
✔ Long-lasting dry sweet (no sugar syrup needed)
This traditional Holi sweet is made with perfectly balanced stuffing and a crispy layered outer covering using the perfect moyan technique.

🛒 Ingredients Used
For Dough:
400 grams Maida (all-purpose flour) – approx. 3 cups
1/4 quantity ghee & oil (half ghee & half oil for extra crispiness)
Approx. 120 ml lukewarm water
For Stuffing:
400 grams roasted Mawa / Khoya
250 grams sugar (adjust as per taste)
Cashews
Almonds
Muskmelon seeds (kharbuja seeds)
Raisins
👩🍳 Step-by-Step Method
1️⃣ Prepare the Dough
Add ghee and oil (moyan) to maida and mix well until it binds when pressed in your fist. Gradually add lukewarm water and knead into a slightly tight dough. Cover with a damp cloth and let it rest for 15–20 minutes.
2️⃣ Prepare the Stuffing
In a bowl, mix roasted mawa, sugar, cashews, almonds, muskmelon seeds and raisins. Combine everything well.
3️⃣ Shape the Gujiya
Divide dough into small balls and roll into medium-sized puris. Place on gujiya mould, add 2 spoons of stuffing in the centre, apply flour-water paste on edges, seal and remove extra dough.
4️⃣ Frying
Heat oil on a medium flame. Test with a small dough piece. Fry gujiyas on medium heat until golden brown. Do not fry on a high flame to avoid a raw inside.
5️⃣ Cool & Store
Let them cool completely before storing in an airtight container.
