This Japanese Deba knife came in heavily chipped and completely dull — the kind of edge that’s more dangerous than useful. Deep chips, fatigued steel, and poor edge geometry meant this wasn’t a quick touch-up. It needed real correction.
In this video, I take this traditional Deba bocho through a full sharpening and repair process, removing chips, resetting the edge, and restoring proper cutting performance while respecting the knife’s original grind and purpose. Heavy single-bevel knives like a Deba demand patience and precision — especially when repairing damage.
For the heavy repair work, I used a water-cooled belt grinder, allowing controlled material removal, reduced heat buildup, and consistent edge geometry during chip removal. Once the damage was corrected, the edge was refined and finished to bring the blade back to clean, functional sharpness.
