✤菠蘿包是香港經典的烤麵包。麵包柔軟,並有甜甜的金黃鬆脆酥皮。儘管名字叫做菠蘿包,但它並沒有菠蘿,名稱來自烘焙後酥皮的外觀而已。
港式菠蘿包 (可做10 個)
✤ 麵團材料
300克 高筋麵粉
20克 奶粉
50 克 糖
5克 鹽
1 只 雞蛋
150克 水
3克 速發乾酵母
25克 牛油 (軟化)
✤ 脆皮: (可做10塊)
50克 無鹽牛油(軟化)
70克 幼砂糖
20克 奶粉
90克 低筋麵粉
1/8茶匙 發粉(泡打粉)
1/8 茶匙 蘇打粉(小蘇打)
1 蛋黃
1 湯匙 牛奶
5 滴 香草精
✤ 烘焙温度:180°C
時間: 12-15分鐘 (按個人焗爐温度差異而有所不同)
✤ 食法
出爐後等一兩分鐘,讓大部份熱氣散去, 菠蘿皮就會變得酥脆,這時候皮酥脆香甜,包鬆軟温暖是最好吃的,再配上一杯香滑奶茶,多好的享受!
菠蘿油: 這是目前香港茶餐廳最受歡迎的菠蘿包食法。趁熱把菠蘿包斜切一下,夾入一片牛油,就可以享受温暖又鬆軟加上半溶化牛油香味的菠蘿油了。
第二天食菠蘿包請用微波爐中小温度加熱25秒回暖一樣鬆軟好吃。

✤ Pineapple bun (菠蘿包, Bolo Bao in Cantonese) is a classic baked bun in Hong Kong. The bun is soft and has a sweet golden crunchy topping. Although the name is called pineapple bun, it does not contain any pineapple. The name comes from the way that the topping looks when it is baked.
Hong Kong-Style Pineapple Buns (Recipe for 10 buns)
✤ Dough Ingredients
300g High gluten flour
20g Milk powder
50g Sugar
5g Salt
1 Egg
150g Water
3g Instant dry yeast
25g Butter (softened)
✤ Crunchy Topping: (Recipe for 10)
50g Unsalted butter (softened)
70g Caster sugar
20g Milk powder
90g Low gluten flour (Cake flour)
1/8 teaspoon Baking powder
1/8 teaspoon Baking soda
1 Egg yolk
1 tablespoon Milk
5 drops Vanilla extract
✤ Baking temperature: 180°C
Time: 12-15 minutes (differs according to the actual temperature of individual oven)
✤ Serving:
Rest the buns for a minute or two to allow most of the heat dissipate. The top will become crunchy while the soft bun is still warm. Serve now together with a cup of milk tea. What a treat!
Pineapple bun with butter (菠蘿油 Bolo Yau in Cantonese) : This is a popular way of serving pineapple buns in cafes in Hong Kong. Cut the pineapple buns diagonally halfway through while it is hot, and sandwich a slice of butter, yes a slice of butter. The warmth and softness of the pineapple bun and the flavor of half-melted butter will make your day!
If you like to serve it warm the next day, warm the bun using microwave oven on medium low for 25s.
