Marag Simach Kuwaiti (مرق سمك كويتي)
Marag Simach is a traditional Kuwaiti fish stew renowned for its rich flavors and aromatic spices. It is a beloved dish in Kuwaiti cuisine, often prepared with fresh fish, vegetables, and a blend of local spices,
Ingredients:
1/2 kg fish (like zubaidi, hamour, or any firm white fish)
4 tomatoes, Pureed
2 Onions, finely chopped
1 teaspoon Ginger garlic paste
2 tbsp tomato paste
4 tbsp vegetable oil
1 tsp turmeric powder
1 tsp Coriander powder
2 tsp Paprika
A handful of fresh coriander (cilantro), chopped
A handful of dill (shibet), chopped
2 dried limes (loomi) – pierced with a knife
3-4 green chilies
Bell pepper ( Optional)
Salt, to taste
Method:
Clean the fish well, cut into medium pieces, and marinate with paprika , Turmeric, Coriander and salt.
Fry them slightly in oil for 2–3 minutes each side.
In a pot, heat oil and sauté onions until golden.
Add garlic and ginger, stir for 1 minute until fragrant.
Add turmeric, paprika powder, coriander, and tomato paste.
Add dried limes (loomi), green chili, bell pepper,salt, and tomato puree.
Bring to a boil, then lower heat and simmer for 10–15 minutes.
Gently place the fish pieces into the simmering sauce.
Cook for another 10–15 minutes on low heat — don’t stir too much to avoid breaking the fish.
