Recipe For Lo Hei Noodles

Описание: Growing up, I welcomed the tradition of festive foods during the Chinese New Year. Each dish holds an important place in the celebration of wealth, prosperity and long life. None more so, than Lo Hei: The Prosperity Toss for a Happy New Year.

Throw the noodles into the air and toss away all of the bad luck! Kung Hei Fat Choi!

Ingredients:
1 packet of longevity noodles, for a long life. (Best sourced from Chinatown.)
3 whole eggs, for fertility and abundance
2 carrots for wealth,
1 cucumber for luck
Few spring onion stems for cleverness
Handful of shiitake noodles, I'm using the longer dried stems too (cause I don't want to take any chances with my luck!)
Few drops of sesame oil.
Few tsbp of Hoisin Sauce mixed with the mushroom soaking broth,
2 tbsp of chilli oil, mixed with the mushroom soaking broth

Optional: some recipes call for raw fish, sesame seeds and roasted peanuts. all wonderful additions or substitute your own 'Lucky Foods!'

(Bonus tip) make sure you lay down some newspaper for the noodle tossing too!
