How To Cook To cook jackfruit curry in Sri Lankan style?
To cook jackfruit curry Sri Lankan style, you will need the following ingredients:
1 can of jackfruit in brine (drained and cut into bite-sized pieces)
1 onion (finely chopped)
2 garlic cloves (minced)
1 teaspoon of ginger (minced)
1 teaspoon of curry powder
1 teaspoon of chili powder
1 teaspoon of turmeric powder
1 teaspoon of coriander powder
1/2 teaspoon of cumin powder
1/2 teaspoon of fennel seeds
1 cinnamon stick
2 cardamom pods
1/2 cup of coconut milk
Salt to taste
Water as needed
1 tablespoon of oil
Instructions:
Heat oil in a pan over medium heat. Add onion and cook until it turns translucent.
Add garlic and ginger and cook for another 2 minutes.
Add all the spices, including curry powder, chili powder, turmeric powder, coriander powder, cumin powder, and fennel seeds. Mix well and cook for 2 minutes.
Add the jackfruit pieces to the pan and mix until they are coated with the spices.
Pour enough water to cover the jackfruit and add cinnamon stick and cardamom pods. Mix well.
Cover the pan and let it simmer on low heat for about 15-20 minutes or until the jackfruit is tender.
Once the jackfruit is tender, add coconut milk and salt to taste. Mix well and let it simmer for another 5 minutes.
Serve hot with rice or roti.
