Zach gives us a lesson in harvesting bananas. He shows us a bunch which is ready to go and point out the yellow color and the full roundness of the fruit. He suggests harvesting early before they get too ripe so you won't have to compete with the birds and rats who are faster and have better eyesight than we do. He pulls a machete from its scabbard and cuts a notch in the trunk at 4-5 feet off the ground. The tree gently falls into his outstretched hand. He cuts the banana rack off and sets it aside. He shows how they cut the banana trunk up into sections and split them and lay them on the ground to promote weed management, moisture retention and fertility. He quotes on of his influences, Ernst Goetcsh who says that in the subtropics you grow bananas in order to grow vegetables. The fruit is just a bonus. Zach goes on to explain how each trunk only produces one rack of bananas and how he likes to organize the material on the ground for maximum benefit.
