Recipe: Banana Pudding Cheesecake
Ingredients:
For the Crust:
1 ½ cups vanilla wafer crumbs (Nilla Wafers)
6 tablespoons unsalted butter, melted
¼ cup granulated sugar
For the Banana Cheesecake Filling:
3 packages (24 oz total) cream cheese, softened
1 cup granulated sugar
2 ripe bananas, mashed well
3 large eggs, room temperature
1 teaspoon vanilla extract
½ cup sour cream
2 tablespoons cornstarch or flour
For the Topping & Garnish:
1 ½ cups heavy whipping cream
1/3 cup powdered sugar
1 teaspoon vanilla extract
2 fresh bananas, sliced
Crushed vanilla wafers
(Optional) Caramel sauce for drizzling
Instructions:
Prepare the Crust: Preheat oven to 325°F (160°C). Mix the vanilla wafer crumbs, melted butter, and sugar in a bowl. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
Make the Batter: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the mashed bananas, sour cream, vanilla, and cornstarch. Mix until well combined.
Add Eggs: Add the eggs one at a time, mixing on low speed just until blended. Do not overmix to prevent cracks.
Bake: Pour the filling over the crust. Bake for 55-65 minutes, or until the center is almost set but still jiggles slightly like Jell-O.
Cool: Turn off the oven and crack the door open. Let the cheesecake cool inside for 1 hour. Remove and run a knife around the edge. Refrigerate for at least 6 hours or overnight to set completely.
Make Whipped Cream: Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
Assemble: Spread a layer of the whipped cream over the chilled cheesecake (or pipe it on). Arrange fresh banana slices on top.
Serve: Sprinkle generously with crushed vanilla wafers and drizzle with caramel sauce if desired to match the "gooey" look. Cut a generous slice and serve immediately.
