胡蘿蔔 Carrots: 100克 100g
鮮香菇 Fresh shiitake mushrooms: 5朵 5 pcs
高麗菜 Cabbage: 150克 150g
菜花 Cauliflower: 150克150g
綠豆芽 Mung bean sprouts: 100克 100g
豆包 Beancurd parcels: 100克 100g
醃漬蘿蔔乾 Pickled radish: 50克 50g
紅甜椒 Red bell pepper: 100克 100g
菜心Choi sum:100克 100g
調味料 Seasonings:
八角 Star anise:1顆 1 piece
薑Ginger:10克 10g
生曬油/黑曬油 Cooking Caramel or dark soy sauce: 2 湯匙 2 tbsp
生抽 Soy sauce: 1-2 湯匙 1-2 tbsp
白胡椒 White pepper: 1茶匙 1 tsp
蘑菇粉 Mushroom powder: 1茶匙 1 tsp
黑胡椒 Black pepper: 1/2 茶匙 0.5 tsp
黃飛香脆椒 Magic Chili: 1湯匙 1 tbsp
海鹽 Sea salt: 1/2 茶匙 0.5 tsp (adjust to taste)
白芝麻 White sesame seeds: 1 茶匙 1 tsp
香菜 Cilantro: 2 根 2 sprigs (optional)
青檸 Lime: 1/4 顆 1/4 piece (optional, for juicing)
🍳 製作步驟 / Cooking Steps
1️⃣ 處理食材 / Prepare Ingredients
1. 若使用 乾河粉,請提前泡在溫水中約 15 分鐘,待其變軟後瀝乾或者煮開3-5分鐘(根據包裝上的說明製作)。
If using dried rice noodles, soak them in warm water for about 15 minutes until softened, then drain. Alternatively, boil for 3-5 minutes (follow the instructions on the package).
2. 新鮮河粉,加冷水浸泡,用筷子輕輕抖散。
For fresh rice noodles, soak in cold water and gently separate them with chopsticks.
3. 胡蘿蔔、高麗菜、紅甜椒切絲,蘑菇切片,豆包撕碎;綠豆芽去掉根部,蘿蔔乾切小丁。
Shred carrots, cabbage, and red bell peppers. Slice mushrooms and tear beancurd parcels into pieces. Remove the roots from mung bean sprouts and dice preserved radish.
2️⃣ 炒料 / Stir-Fry
1. 鍋中加入少許油,放入八角、薑絲炒香。
Heat a little oil in a wok, add star anise and shredded ginger, and stir-fry until fragrant.
2. 接著放入豆包、香菇翻炒至微焦,撈出豆包。
Add beancurd parcels and mushrooms, stir-fry until slightly browned, then remove the beancurd parcels.
3. 鍋中可添加適量油,按順序放入綠豆芽、胡蘿蔔、高麗菜、花菜、醃蘿蔔乾翻炒,翻炒至斷生。
Add more oil if needed, then stir-fry mung bean sprouts, carrots, cabbage, cauliflower, and preserved radish in order until they are cooked but still crisp.
4. 將河粉放入鍋中,倒入生曬油、醬油,迅速拌炒。
Add the rice noodles to the wok, pour in cooking caramel and soy sauce, and quickly toss to combine.
5. 最後加入菜心和紅椒,快速翻拌 1 分鐘,加入黑胡椒、白胡椒、蘑菇粉和適量鹽拌勻,讓所有食材均勻入味。
Finally, add baby bok choy and red bell peppers, stir-fry for 1 minute, then season with black pepper, white pepper, mushroom powder, and salt to taste. Mix well to ensure all ingredients are evenly flavored.
6. 關火,將炒好的河粉盛入盤中,撒上白芝麻、香菜、辣椒花生碎,擠上少許青檸汁增添清新風味。
Turn off the heat, transfer the stir-fried noodles to a plate, and garnish with white sesame seeds, cilantro, crushed chili peanuts, and a squeeze of lime juice for a refreshing touch.
