Making puff pastry from scratch gives your twists a flaky, buttery texture that can’t be beat, but if you want, you can use store-bought puff pastry. They are great for a dinner party or holiday gathering, or a cocktail party; these cheese twists make a perfect hors d’oeuvres. They are super easy to make. In a mixing bowl, pour 333g of flour, 5g of sea salt and 85g of butter. Mix together until fine crumbs form. Change to a dough hoof and add in 150g of cold water and 8g of vinegar. Mix until a ball forms. Wrap in plastic wrap and chill for 8 hours. Also, wrap 250g butter in plastic wrap and smash it down into a square and chill for 8 hours.
Roll out the dough into a square. Place the butter in the middle and fold the edges around to completely enclose the butter. Roll out the dough and letter fold. Repeat and wrap in plastic wrap and chill for 1 hour. Repeat this step three times.
Roll the dough out into a large rectangle. You will not use all of the puff pastry. Cut two smaller rectangles approximately 5x12 inches. Spread 2 tablespoons of dijon mustard over both rectangles. Grate 200g of cheddar cheese over the dijon mustard and place the other half on top. Cut into strips. Twist them tightly and place them on a cookie sheet. Bake at 380 for 20 minutes. Cool and serve.
