Today we’re sharing a Slow Living Baking style high-hydration (88%) mixed seed high-fiber artisan loaf.
Featuring a crackling crust and open, airy crumb, Chia and Hemp seeds add layered texture while keeping the bread light. Minimal kneading and slow fermentation create a tender, chewy texture — a true home-baked artisan bread experience.
✨ Ingredients (Full Recipe):
*Poolish Starter*
Bread flour 120 g
Warm water 120 ml (90–95°F / 32–35°C)
Dry yeast 3 g
*Main Dough*
Bread flour 380 g
Warm water 250 ml (90–95°F)
Dry yeast 2 g
Salt 1 tsp
Olive oil 1 tbsp
*Mixed Seeds*
Mixed seeds 25 g (Chia, Buckwheat Kernels, Hulled Hemp Seeds)
Water 90 ml, soaked 30 minutes
🕒 Fermentation & Process:
Poolish starter ferment 3.5 hours
Multiple coil folds, rotate 90° each time
Refrigerate overnight for 12 hours
Second proof about 1 hour
Bake in preheated oven at 450°F (230°C) with steam, 25 minutes
