Labneh Balls Recipe
Ingredients:
• Full-fat yogurt 1 kg
• Olive oil (enough to cover the balls in a jar)
Coating options:
• Sesame seeds
• Dried mint (do not use fresh mint or fresh coriander)
• Chat masala
• Za’atar
• Sumac
Preparation
1. Place a muslin cloth or clean cheesecloth over a basket.
2. Pour in the yogurt and cover the yogurt with the cloth.
3. Place the basket in a bowl in which whey will collect.
4. Put a heavy weight on the yogurt and put in the fridge for 3 days to drain out all the whey.
5. After 3 days, you’ll have thick, creamy labneh.
6. Transfer the strained labneh to a bowl.
7. Using clean hands, roll the labneh into small balls (about the size of a walnut).
8. Coat with your favourite coating and transfer the labneh balls into a clean, dry jar.
9. Pour olive oil over them until fully covered.
10. Store in the fridge and use for months.
11. Enjoy with bread, roti or crackers. Enjoy!
NOTE: Olive oil in fridge becomes thick and cloudy. No need to worry — it doesn’t mean the oil has gone bad. Just take the jar out of the fridge and let it sit at room temperature for 15–20 minutes — the oil will turn clear and liquid again.
