Schezwan Chakli or Sichuan Chakli is a spicy variant of one of the most popular Indian snacks 'Chakli'. Usually made or bought during the festive seasons, especially on Diwali Schezwan Chakli is something one can't resist.
Made with a mixture of rice flour, gram flour and urad dal mixed with some spices to enhance its taste and then tossed with chinese seasoning or schezwan chakli masala, this snack is perfect to please your spicy taste buds.
Here at Nonstop Chulha, we bring to you a very simple recipe of Schezwan Chakli, that you can make at your home without much hassle. It's just the mixture, then it's just frying the chaklis. Ever tried making chakli at home?

======================== Recipe ========================
Ingredients:
1. Rice Flour - 1 cup (200 gms)
2. Urad Dal - 1/4 cup (50 gms) ground
3. Besan - 1/4 cup (50 gms)
4. Garlic - 4-5 cloves crushed
5. Kashmiri Red Chilli Powder - 1 tbsp
6. Black Pepper Powder - 1/2 tsp
7. Turmeric powder - 1/4 tsp
8. Salt - 1 tsp or as per taste
9. Schezwan Sauce - 2 tbsp
10. Hot Oil - 2-3 tbsp
11. Oil (For Deep Frying)
12. Chinese Seasoning / Schezwan Chakli Masala
13. Baking Soda (optional - makes it crispy)
Steps:
1. In a bowl take rice flour, ground urad dal, besan, crushed galic, kashmiri red chilli powder, black pepper powder, turmeric powder, salt, schezwan sauce and baking soda (optional)
2. Mix everything well with your hand
3. Heat 2-3 tbsp oil and add in the mix we created
4. Mix the oil well with the rest of the mix
5. Add little water at a time and start kneading until you get a hard dough
6. Take a chakli maker and grease it with some oil
7. Fill the chakli maker with the dough
8. Heat oil in a kadhai to deep fry the chakli
9. Once the oil is hot reduce the flame to low
10. Squeeze the chakli dough from the chakli maker into the oil
11. Deep fry the chakli for 4-5 minutes on low flame
12. Once the chakli is ready, remove them on bowl/plate with kitchen tissue paper
13. Season it with some chinese seasoning /schezwan chakli masala
14. Toss the chakli so that the seasoning mixes well with the chakli
15. Schezwan Chakli is ready
