Nikumiso Gohan 肉味噌 - Miso Ground Beef Rice Bowl
Nikumiso literally means meat miso and that's exactly what this is - ground beef cooked in a slightly sweet, nutty miso sauce.
I like nikumiso over rice, but if you're not feeling it, you can serve it with noodles, over tofu, stuffed into Japanese eggplant, in sandwiches or wrapped in lettuce. Good hot or cold, top it with a fried or soft-boiled egg, the possibilities are endless.
Here's a simple recipe for nikumiso gohan, hope you give it a try!
Servings: 1
Ingredients:
1 tbsp of sake
½ tbsp of soy sauce
1 tbsp of water
½ tbsp of sesame oil
1 ½ tbsp of miso paste
½ tbsp of sugar
2 chopped scallions
1 tsp of minced garlic
1 tsp of grated ginger
½ lb of ground beef
vegetable oil
cooked rice
fried egg (optional)
chopped scallions and nori for garnish (optional)
Directions:
1. Combine sake, soy sauce, water, sesame oil, miso paste and sugar in a small bowl. Set sauce aside.
2. Heat vegetable oil over medium flame. Add garlic, ginger and chopped scallions. Sauté until fragrant.
3. Add the beef and cook until most of the pink is gone.
4. Pour in the sauce and cook until ground beef is done.
5. Spoon miso ground beef over rice. Top with fried egg, chopped scallions and nori. Enjoy!
