Turkish kebabs are and have always been the most popular Turkish foods. Some like to eat their Kebab on a stick, some like it on a plate sliced carefully, and some others like it on their lavash bread wrapped with a bunch of vegetables. But in Eastern Turkey, there is a city called Şanlıurfa where locals cook and eat their Kebabs on trays! These special Kebabs are called Tray Kebabs (Tepsi Kebabı).
Local families of the region are usually grand and living together. Cooking food on a tray is an easier and more efficient way to make sure big batches of food is ready for the whole family as well as guests that may arrive spontaneously without further notice. However, the most important reason why Kebabs are cooked on trays is because of their unique and authentic taste! Ingredients are finely chopped and mixed together with minced beef, and placed on a huge tray. The tray is then sent off to the local bakeries which cook these Kebab trays in big ovens heated with wood fire. Wood gives Kebab an aroma that cannot be achieved anyhow else. This is why Kebabs are so delicious in Turkey!
