Enjoy this British spin on Chilli Con Carne, quite possibly the most delicious thing you can make with minced beef. My recipe is a winner every time, ready in an hour and a half, and is mostly hands-off - what's not to love?
This is a great batch recipe - it keeps well in the fridge for a few days (and its flavour will improve if served the next day!) or freezes well in ziploc bags.
If re-heating, heat gently in a pan (with a little water if heating from frozen) over a low heat until thoroughly heated through. You can microwave it safely, but I don't recommend it as you'll need to be careful to stir it very regularly to avoid hot-and-cold spots forming.
My recipe doesn't contain coriander (cilantro) but feel free to add it if it's your thing. I'd finely chop and add it after the first hour of simmering.

Recipe:
Serves four to six hungry people, and freezes well too!
Spread 500g / 1.1lb 5% fat beef mince on a baking tray.
Season liberally with salt and black pepper
Cook at 220°C for twenty minutes, until very well browned
Meanwhile, peel and chop 1 large (or two smaller) onions
Deseed (optional) and chop two or three medium chillis
Fry hard over high heat until the onion begins to brown, three or four minutes
Squeeze in about a tablespoon and a half of tomato puree (paste)
Add five or six finely chopped garlic cloves
Turn heat down to low and cook gently, 1 minute
Add 2-3tsp chilli powder (heat to suit your taste)
Add 1tbsp ground cumin (toast and grind from seed if you've time - it's better!)
Add 1tsp celery salt
Add 1-2tsp garlic granules (ideally not the very fine garlic powder!)
Add 1-2tsp smoked paprika
Stir to combine, then cook for another minute, until just fragrant
Once the meat is done, scrape the pan and break up the chunks, then add into the pan with the spiced onions and chillis.
Add several good glugs of Worcestershire sauce, along with the same amount Henderson's Relish if you have it (link above).
Stir well, and allow to heat gently for a minute
Stir in half a small glass (about 150ml) Coca Cola (or full-fat cola drink of your choice).
Stir in two good quality tins of chopped tomatoes, along with 1 tin of cold water (use this to get the tomato juices out of the tins).
Stir through, cover and simmer over your lowest heat, 1hr. Stir occasionally and top up with a little water if it begins to look too dry.
After one hour, optionally use a potato masher to remove any remaining chunks of tomato or meat.
Optionally add one drained and well-rinsed tin of kidney beans, or other tinned beans of your choice (if using dried beans, these will require pre-cooking - follow the pack instructions).
Taste, and then adjust spices, either by adding directly to the pan or (my preferred method) by lightly frying them in an oil paste.
Spices depend on your taste, but as suggestions you will want a generous amount of cumin, probably more paprika, and maybe more chilli powder - let the taste be your guide.
It will be under-seasoned, but don't adjust salt yet - wait until the dish is finished for that.
Optionally add a dash of balsamic vinegar, or other acid of your choice (a glug of wine works here too in a pinch) to brighten the dish. Go gently, tasting as you do.
Re-cover and allow to simmer gently for 20mins.
Once done, adjust the consistency with a little water if needed, then taste and season generously with salt - it will need more than you probably think it does.
Optionally break in 35g good quality high-cocoa dark chocolate. Cover for a minute or two to let the chocolate melt before stirring through.
Serve with your favourite accompaniments - white rice (long grain is my preference for chilli), tortilla chips, jalapeños, sour cream, guacamole - the list is endless!
