Paaye
This is the perfect recipe for Paaye. One of the most loved and appreciated recipes from our family.
Ingredients:
Mutton Trotter 8 pieces
Water 4 Liters
Onion Whole 1 medium
Cinnamon Stick 2 inch piece
Ginger Garlic Paste 2 tbsp
Turmeric Powder 1 tsp
Salt 1 tbsp
Onion 2 medium sized (thin sliced)
Oil 3/4 cup
Ginger Garlic Paste 1 tbsp
Mutton Shank Pieces 400 gm
Coriander Powder 3 tbsp
Red Chili Powder 1 tbsp
Salt 1/2 tsp
Cinnamon Stick 1 in piece
Yogurt (beaten) 3 tbsp
Water 1 cup
Golden Fried Onion
For Garnishing:
Ginger julienne cut
Coriander Leaves Chopped
Green Chili Sliced
Method:
Take Mutton Trotter in a deep pot and add hot water.
Put whole onion, ginger garlic paste, cinnamon stick, turmeric powder and salt in it.
Cover and cook on slowest heat until the trotters are tender enough. (This will take around 4-5 hours)
In a wok golden fry the sliced onion, then spread on paper to retain their crispiness.
In the same leftover oil, fry ginger garlic paste, add mutton shank pieces then fry until the color changes.
Season with Coriander powder, red chili powder and salt, keep frying the spices.
Add cinnamon stick and beaten yogurt.
Pour a cup of water, and add golden fried onion. (you can grind the fried onion as well; it will be more convenient)
Cover and cook for 1 hour. Then start stirring until the oil is separated.
Now remove the onion from trotter soup and add this prepared meat to the Soup.
Cook on high flame until it starts to boil.
Dissolve corn flour in water, and pour in the boiling gravy. while stirring.
Cook on the slowest heat for 30 minutes.
Then serve hot with Naan, garnish the plate with coriander leaves, green chilies and ginger.
