Main Ingredients:
500g mutton or chicken liver (kaleji), cleaned and cut
2 large onions, finely chopped
2 tomatoes, pureed
2 tbsp ginger-garlic paste
¼ cup oil or ghee
Whole Spices:
2 bay leaves
1-inch cinnamon stick
4 green cardamoms
4 cloves
1 tsp cumin seeds
Powdered Spices:
1 tsp turmeric powder
2 tsp red chili powder (adjust to taste)
1 tbsp coriander powder
1 tsp garam masala
Salt to taste
For Garnish:
Fresh coriander, chopped
Ginger juliennes
Lemon wedges
Step-by-Step Method:
1. Prepare the Liver:
Clean liver thoroughly and cut into bite-sized pieces.
Marinate with ½ tsp turmeric and 1 tsp salt for 15 minutes.
2. Cook the Liver (Quick Boil – Optional):
Boil marinated liver in water for 5-7 minutes to remove any strong odor. Drain and set aside.
3. Make the Masala Base:
Heat oil/ghee. Add whole spices and let them crackle.
Add chopped onions and sauté until golden brown.
Stir in ginger-garlic paste and cook for 2 minutes.
4. Prepare the Gravy:
Add tomato puree and cook until oil separates.
Add all powdered spices (turmeric, red chili, coriander) and salt.
5. Combine & Cook:
Add boiled liver pieces. Mix well to coat with masala.
Cook on medium heat for 10-12 minutes until liver is tender.
Sprinkle garam masala and garnish with fresh coriander.
6. Serve Hot:
Garnish with ginger juliennes and lemon wedges.
