Are you looking for an alternative to your morning porridge? Do you like buckwheat? If so, this recipe is for you! Cinnamon, apple and nuts give this ‘breakfast cake’ luscious feel while coconut milk, vanilla and maple syrup are match made in heaven! Yes, it is vegan!
Ingredients:
1 1/4 cups raw buckwheat groats
1 tsp baking powder
1 tablespoons ground flaxseed
1 tsp vanilla extract
2 tsp ground cinnamon
1 tsp fresh grated nutmeg
1/2 tsp ground ginger
Pinch of salt
2 1/2 cups low fat coconut milk
1/4 cup honey or maple syrup (V)
1 cup nuts lightly chopped
1 1/2 cups small-diced apple
1 tablespoon melted coconut oil
