Masterbuilt Gravity 560 - Smoked Chicken Wings

Welcome to Outdoors with Geoff! Come along with me as I cook Smoked Chicken Wings on the Masterbuilt 560! This is indeed one of my favorite cooks that I make often and is always a crowd-pleaser.
I prefer to use whole wings when I grill just as I think it gives for a better eating experience than a party wing. I always use a base Salt, Pepper Garlic All Purpose Seasoning and an additional rub that adds another layer of flavor. For this cook I used the spices listed below.
•Fiesta Brands Garlic Pepper Seasoning
•Meat Church BBQ's Honey Hot Hog BBQ Rub
I thoroughly seasoned the wings with both spices and rubs and let them rest for about twenty minutes to absorb the seasonings to maximize flavor. In the meantime, I prepared for the cook on the Masterbuilt 560, bringing the cooker up to 275°. Right before the cook, I threw an extra couple of chunks of Hickory into the ash pan in addition to the chunks in the chute.
I smoked these for an hour and twenty minutes until the pen thermometer read 165° internal temperature on the wings. I then removed them from the cooker and cranked up the Masterbuilt 560 to 650° to cook the winds for three minuted to tighten up the skin and make it bite through. Afterwards, I pulled the wings off and glazed some of them with barbecue sauce, and let them tack up on the grill for about ten minutes. The sauce consisted of the items listed below.
•Three Parts Sweet Baby Ray's Barbecue Sauce
•One Part Apple Cider Vinegar
These wings had a great taste overall. The base layer from the Garlic Pepper Seasoning was prevalent and I could even visibly taste the parsley as well. The Meat Church Honey Hot Hog BBQ Rub added a sweet, then heat taste that brought all of the flavors together with the Hickory.
