Start your cheesemaking journey with this simple fresh cheese.
Queso Blanco
1 gallon whole milk
1/4 white vinegar, lemon juice or apple cider vinegar
1. Heat milk to 180° F (82°C)
2. Add your acid and stir for 10 minutes
3. Pour off the whey and catch the curds in a cloth lined colander
4. Allow to drain until desired texture ( longer is going to be more dry)
5. Refrigerate for up to a week.
