Cookie Croissant Recipe (Le Crookie):
Make fresh croissants or save some time with already baked or frozen croissants. We stopped at a local bakery in Brooklyn for some butter croissants.
Yield: 6 Cookie Croissants
Cookie Dough:
Ingredients:
1/2 cup (115g) unsalted butter, softened
1/4 cup (50g) granulated sugar
1/2 cup (100g) packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups (190g) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (130g) Callebaut Milk Chocolate Chunks
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
2. Using a whisk attachment, cream together the butter, granulated sugar, brown sugar, 1 egg, and vanilla extract until smooth & fluffy.
3. In a separate bowl, combine the flour, baking soda, and salt.
4. Switch to a paddle attachment & gradually add this dry mixture to the wet ingredients, mixing until just blended.
5. Mix in the chocolate chunks (Callebaut Milk Chocolate Chunks)
6. Prepare the croissants by delicately slicing them open, creating a perfect sandwich-ready base.
7. Place two scoops into each croissant and spread if needed.
8. Spread a thin layer of cookie dough on top of each croissant.
9. Bake for 15 minutes at 350 degrees Fahrenheit.
10. Allow the cookie croissants to cool on the baking sheet for a few minutes.
11. Optional: Add chocolate drizzle for decoration & enjoy!
