Chicken and green bean paella

14 oz skinless chicken thighs
9 oz flat green beans
3.5 oz short brown rice
1 ripe tomato
2 medium garlic cloves
8–10 fl oz chicken stock (ready-made or concentrate + water; approx. 1–1¼ cups)
Sweet paprika
Saffron threads
Extra virgin olive oil
Salt
Cut the chicken into 1.6–2-inch pieces. Heat a paella pan or wide skillet and add a drizzle of olive oil. Season and brown the chicken and set aside.
Trim the ends of the green beans and remove the side strings with a peeler. Cut them into pieces, season and brown them in the paella pan after the chicken. Set aside.
Halve the tomato and remove the stem end. Blend the tomato with the peeled garlic cloves.
Add a little more olive oil to the paella pan if needed. Over medium heat, add one teaspoon sweet paprika and a few saffron threads. Stir briefly with a wooden spoon and immediately pour in the blended tomato and garlic to prevent the paprika from burning. Sauté the tomato and let some of the liquid evaporate.
Add the rice and sauté it until brown. Then pour in the chicken stock. If using concentrate, spread one or two teaspoons across the pan. Add the water. It needs approximately 2.5 or 3 times the volume of the rice.
Use the wooden spoon to spread the rice evenly across the paella pan. Place the previously browned green beans and chicken on top of the rice.
Raise the heat until it boils and then lower to medium heat.
TIP: If your paella pan does not heat the entire surface evenly, cover with parchment paper with a hole in the center. This trick helps the rice cook evenly.
Cook 35–45 minutes over medium-low heat. When almost no liquid remains and the rice is almost ready, raise the heat for the final push so the rice on the bottom browns and forms the famous socarrat.
Always check the rice in the center of the paella pan. If it is not ready and there is no liquid left, add a little more stock or water. If it's ready, turn off the heat and cover the paella pan with kitchen paper or a clean cotton cloth. Let rest covered for 5–10 minutes and ready to serve!
